From September 19 to 21, the taco —a true symbol of identity, festivity, and tradition— took center stage at Grand Velas Riviera Maya during the first edition of Tacology: The Best of Mexico. This culinary gathering brought together chefs, food lovers, and curious gourmets for a three-day journey where Mexico’s culinary heritage blended with creativity and sophistication.

Day 1: The Street

The experience began with the unmistakable flavor of the urban taco. Chef Jorge Guadiana and his team from Los Atarantados, well-known in Monterrey and Mexico City, transformed the resort into a tropical-style taquería. Music, street-inspired décor, and the warmth of the people recreated the essence of the most popular roots of this iconic dish.

Day 2: The Origin and The Reinterpretation

In the morning, Chef Jorge Córcega and his son, Luis Córcega, from Ruta de la Milpa, invited guests to rediscover the essence of the taco in a tortilla and salsa workshop titled The Origin. Through stories of corn and artisanal practices, participants honored the ancestral foundation of Mexican cuisine.

At nightfall, the proposal evolved toward the avant-garde. Chefs Israel Montero (Siembra), James Tahhan, Jorge Guadiana (Los Atarantados), Carlos Montejo (Chaká), and hosts Nahúm Velasco and Mikel Alonso presented an eight-course dinner that reimagined the taco with contemporary techniques and creative twists —while preserving its essence.

Day 3: Mexico in a Taco

The grand finale unfolded as a beachfront fiesta. Stations featuring some of the country’s most representative tacos guided attendees through a sensory journey filled with live music, the sound of the sea, and a festive atmosphere that celebrated Mexico’s rich culinary diversity at its finest.

Tacology not only paid tribute to a national icon but also elevated it, transformed it, and shared it as a bridge between tradition and innovation, between past and present. A reminder that the taco is more than a dish: it is a universe of stories, flavors, and memories that connects us all.
