A tribute to female talent through the Grand Velas Riviera Maya chocolate workshop

A destination’s culinary identity is defined by the hands that transform raw ingredients into art. At Grand Velas Riviera Maya, this hallmark comes to life through the talent and expertise of the female specialists who lead every flavor profile.
In honor of Women’s Month, the resort opened the doors of its gastronomic sanctuary to pay tribute to the creative minds behind its stoves with an unprecedented initiative.
This celebration introduced “The Flavors by Women: Chocolate Bonbon Workshop“, an experience designed to highlight the essential role of women in haute cuisine and their impact on global gastronomy, which remains available for travelers today.
Technique and tradition during Women’s Month

Under the guidance of experienced chefs, guests can explore the delicate art of crafting artisanal bonbons from scratch. In this space, participants learn fundamental techniques in tempering, molding, and filling.
The workshop uses a premium selection of milk and dark chocolate with deeply Mexican accents, such as wild red fruits for a sweet balance, chili for a touch of contrast, and orange to highlight the chocolate’s citric notes.
Beyond the technical skills, this session offers an authentic window into the personal trajectories of these culinary experts, giving small groups a chance to learn about the dedication that drives daily luxury service.
The masterminds behind the flavor

The success of this proposal is led by four extraordinary women whose leadership and technique are fundamental pillars of the resort’s culinary offerings:
- Mariana Alegría Gárate – Executive Sous Chef: Trained under Maître Chocolatier Franck Madala in Monaco, she combines technical precision with her sommelier certification.
- Erika Anahí Villanueva Mora – Chef de Cuisine at Cocina de Autor: Leading the Michelin-starred restaurant, Erika uses food as the most powerful bridge between cultures.
- Lorena Serrano Lara – Suite Service Chef: Her story began in 2012; thanks to her discipline and energy, she rose through the ranks to reach her current leadership role at the property.
- Martha Elena Hidalgo López – Pastry Chef: With over 23 years of experience, she is the expert in avant-garde techniques that define the resort’s luxury pastry.
An experience available year-round

Although this workshop was born as part of a commitment to celebrate female talent during March, the great news for travelers is that the experience will remain available throughout the year for private group reservations.
