The spotlight is on a mosaic of tropical flavors: juicy mango, sweet watermelon, crisp jícama, ripe pineapple, and freshly cracked coconuts. Enhancing the experience is a curated selection of healthful salts. Guests can explore the delicate crunch of Maldon salt, harvested since Roman times from England’s Blackwater Estuary; the mineral-rich pink Himalayan salt, known for supporting cardiovascular wellness; antioxidant-packed black volcanic salt; truffle salt with anti-inflammatory properties; and the iconic Mexican sal de gusano, made from agave worms.
Ancestral tradition

Yet the true local gem is the Colima sea salt, hand-harvested in the Cuyutlán Lagoon, just south of Puerto Vallarta. Rich in magnesium, potassium, and calcium, this ancestral salt is naturally filtered through an ancient dried lagoon, free from microplastics and produced just a few days each year, making it a true rarity.
