One of the culinary delights that stand out by its authenticity and exquisite spicy flavor is the Aguachile. The creation of this delicious dish is linked to the Mexican state of Sinaloa, but now it has become a specialty of the Mexican western coast gastronomy, especially in Nayarit, where it has received a distinctive touch that reflects the region’s unique style.

Although each region has its own version, the basic ingredients of the Aguachile are chili, lemon, onion, cucumber, and shrimp, the star ingredient, although other types of seafood like fish, scallops or octopus can be used too. According to the place where is prepared, some extra ingredients are added, such as mango, avocado, jicama, tomato, coriander, parsley, clam juice, Worcestershire sauce, and more. 

Traditional Aguachile recipes use chiltepín or serrano chili, however, thanks to the large number of varieties cultivated in Mexico, some recipes include habanero,  jalapeno or chile de Arbol peppers, while people who are less tolerant to spicy food prefer to prepare it without this ingredient.
