From August 20th to September 20th, 2026, Puerto Vallarta will host the first edition of Cuisine beyond frontiers, a culinary gathering that reinvents the iconic nogada through a bridge of flavor connecting Mexico, the United States, and Canada.
This culinary display will be held simultaneously across three unforgettable venues: Velas Vallarta, Casa Velas, and Táu Beach Club.
The evolution from the Nogada Festival to Cuisine beyond frontiers
What began over three successful years as the Nogada Festival at Velas Vallarta—a celebration that surprised guests and local visitors with innovative dishes such as pizzas, enchiladas, and crepes inspired by this iconic sauce—takes a major leap today.
The festival transforms and expands to more Velas Resorts properties under the concept of Cuisine beyond frontiers. This initiative stems from the premise that gastronomy is a universal language capable of uniting cultures. Starting with this fall edition, the brand will continue celebrating the emblematic ingredients of each season in future editions.
A three-course culinary journey
The heart of this first edition of Cuisine beyond frontiers is a cross-border itinerary conceptualized by Sandra Macías, Executive Chef at Casa Velas and Táu Beach Club. With over a decade of experience and a vision focused on experimentation and the richness of local ingredients, the chef uses corn, chiles, and Mexican nogada as a starting point to intertwine them with representative ingredients and techniques from the United States and Canada.
The result is a three-course menu where the creamy texture of Persian walnuts, the sweet touch of pomegranate, and North American seasoning achieve a delicious balance.
